The cuisine in Mallorca has a Mediterranean character without exception. The basic ingredients are vegetables like peppers, tomatoes, courgettes, aubergines and garlic as well as plenty of meat. The dishes are prepared with olive oil to a large extent.
For many local people in Mallorca the day begins with a coffee and an “ensaimada“, a spiral dripping pastry covered with icing sugar.
The so-called tapas, small cold and warm appetizer, which frequently replace the main meal, are especially popular at local people and tourists.
The probably most well-known delicacy of the island is the sobrassada, a mixture of smoked pork sausage and salami, which is sometimes piquant and sometimes spicy and comes from black pigs. It has its red colour from the pepper.
As dessert one likes to serve flan or almond cake with the coffee, the meal is often finished with a small glass of Palo or Hierbas, which exist in different variations.
